Canned foods are the best way to preserve texture, presentation and good taste of processed food for a long time without preservatives!
How? Through sterilization. Sterilization was invented a long time ago by a French chef(1) in 1810 to preserve perishable foods in a stable form that can be stored and shipped to distant markets during all months of the year.
The process is simple: cans are sealed and vacuumed to provide air tight condition, then cans go for controlled heating in high temperature.
The heating process kills bacteria and preserves the food. The product is therefore safe to consume with no preservatives added. |
